with just plain water you're running your car without any anticorrosion or antiwear additives in the cooling system, and that will be a problem.
Stuff can grow in just plain water too and reduce flow and or cause a blockage in a passage that you don't want plugged, think heater core & radiator.
Speaking of radiators have you check yours with a temp gun? How many miles are on your car?
The turbulator style of radiator that Audi used in our cars, are efficient, but are known to plug after time.
