Bathroom renovation, design advice?

In addition to replacing our roof this year we are also looking at renovating both bathrooms.
The powder room is first because the floor is soft due to termite damage.
It's a small room, only 3' x 6'. Sink on one end, toilet on the other.

We don't want to go too crazy with it. But since it's a small room we can afford to have some fun with the design. The house is a mid-century ranch, our style falls into the "transitional" category.

We have been looking at pictures online (Houzz, Google images, etc) and have seen lots of designs where the wall behind the sink is tiled as an accent wall, and the other walls are sheetrocked.
I asked one of the contractors who came to the house about it, and he said that he has not seen that sort of design. Is that something that only exists in pictures, but not realistic in real life?
Anyone have any opinions on the idea?
