I would heat gun the bottom of oil pan while oil temp is up to operating temps (225) to see how it matches. Do a control measurement on totally cold engine too to ensure the gun is reading right (reading on metal is notorious tricky).

Other that that there are known differences in running temperatures of different oils. Expect 190-235 temp spread depending on brand and more importantly viscosity of oil.

I think you're perfectly fine with your temp (assuming the gauge shows right).
